“Green” veggie soup with bulgur wheat

Green veggie soup with bulgur wheat

This is a really easy to make soup, that offers a lot of flavor and all the great nutrients found in dark green vegetables.  Since no “fat” was added to the mix of lovely ingredients, enjoying this dish does not involve being overly concerned about calories!  And as mentioned, this is a super easy recipe to make, since once all the ingredients are in the pot, it basically cooks itself!

Ingredients:

1 stem of leeks, slice into 1/2 inches slices

1bushel of kale, cuts into bite-size pieces

1/4 head of white cabbage, shredded

1 pound of green beans

3 gloves of garlic

1 cup of bulgur

Spices:  salt, black pepper, cumin, Italian seasoning

Preparation:

Place all the ingredients in a large pot and cover with water.  Simmer until all the vegetables are soft.
