Tired of having the same old cabbage salad,or commonly known and referred to as coleslaw that just gives you the illusion of eating healthy because of the veggies and yet has has tons of mayo in it? Well, here is a solution, a much healthier version without the white goo:
Ingredients:
1 cucumber, 1 green bell pepper, 1/2 head of white cabbage, cilantro, dill
dressing: oil, vinegar, salt, pepper, dijon mustard
Mix the ingredients for the dressing. Since I don’t really measure my ingredients, I just do the taste test for flavor, since consistency here doesn’t really matter.
Then add finely sliced cucumber, sliced or diced greed pepper and thinly sliced white cabbage, chopped cilantro and dill to it.
If possible and time-permitting, make this salad a few hours before serving … and don’t be afraid of left-overs either here, since the marinating in the dressing makes all the flavors infuse over time!
This is a really easy dish that can be prepared way ahead and can easily be stored for later consumption and because it is so easy to make, it is a great addition to any potluck or get-together!
