Barley Food Fact: many people do not know barley, how to prepare it and what other ingredients to serve it with. Yet, barley is super easy to prepare and can be used as a side dish (with herbs and/or spices), in a soup or stew, or in salads. Best of all, barley is considered a “super food,” due to the fact that it is high in protein and low in fat and a great source of fiber and minerals. Eating barley is also believed to promote a healthy blood pressure, bone health and heart health and can also help prevent or lessen inflammation (http://www.medicalnewstoday.com/articles/295268.php).
Prepare one cup of barley separately from the other ingredients by cooking them in salt water until tender, this way, those who eat the soup can add as much or as little barley to their soup as they like.
Ingredients for the soup:
corn, tomatoes, carrots, green beans, white beans and black beans.
beef broth cube, salt, pepper, paprika and oregano.
thinly sliced turkey sausage.
Place all the ingredients in one large pot and cover with water, simmer until all the ingredients are tender. Add spices for flavoring, if more ‘spice” is needed, add a dash of chili powder or hot sauce.
